Get in my belly | Shrimp and Arugula Wraps

This is a great Sunday lunch. I also serve the mixture on top of mixed greens with herbs or on brioche buns.

Ingredients

4 oz. cream cheese, softened
1 tbl. mayonnaise
1 pound shrimp meat, coarsely chopped
6 green onions, thinly sliced
2 cloves garlic, minced
1 tbl fresh lemon juice
1/4 tsp cayenne pepper
1/4 tsp salt
Pepper to taste

A dash of cayenne or horseradish to taste (optional)

2 cups arugula or baby spinach
8 flour tortillas (sun-dried tomato and whole wheat work well)

Directions

Mix together cream cheese and mayonnaise.
Fold in shrimp, green onion, garlic, cayenne pepper and salt.
Lay wrap on work surface.
Top with 1/8 of shrimp mixture.
Add arugula and roll up.

Repeat with remaining ingredients.
