4 oz. cream cheese, softened
1 tbl. mayonnaise
1 pound shrimp meat, coarsely chopped
6 green onions, thinly sliced
2 cloves garlic, minced
1 tbl fresh lemon juice
1/4 tsp cayenne pepper
1/4 tsp salt
Pepper to taste
2 cups arugula or baby spinach
8 flour tortillas (sun-dried tomato and whole wheat work well)
Mix together cream cheese and mayonnaise.
Fold in shrimp, green onion, garlic, cayenne pepper and salt.
Lay wrap on work surface.
Top with 1/8 of shrimp mixture.
Add arugula and roll up.
Repeat with remaining ingredients.
