Get in my Belly | Smoky Corn Chowder with Shrimp

Fantastic fall soup recipe. 

Found this on Pinterest (via Whit & Whimsy). My goal for fall is to actually try some of those recipes I've been pinning on Pinterest. (Although, the sweet far outweighs the savory - I may need to increase my running milage per week!)


Smoky Corn Chowder with Shrimp
(adapted from Real Simple)

MAKES 2 SERVINGS

INGREDIENTS:
* 2 slices bacon, cut into 1/2-inch pieces
* 1/2 pound shrimp, peeled and deveined
* 1/2 medium yellow onion, diced
* 2 cloves garlic, minced
* 1 Tbs. smoked paprika
* 1 pinch crushed red pepper
* 3 ears fresh corn, kernels removed (frozen, thawed and drained - worked just fine)
* 2 cups chicken stock
* 1/2 cup half and half (or cream)
* coarse salt and freshly ground pepper
* basil slivers for garnish (optional) (I used fresh tarragon)

DIRECTIONS:
Heat a medium-sized pot over medium heat. Add the bacon and cook until crispy. Remove bacon from the pan and set aside on a paper towel to drain. Drain all but 1Tbs. bacon fat, if you have that much in the pot.

Raise the heat to medium-high. Add the shrimp to the pot and sear on one side for 2 minutes. Flip and sear 30 more seconds. Remove shrimp from pot and set aside.

If you need to add a little oil (or bacon fat) to the pot, do so. Add the onions to the pot and sauté 5 minutes. Add the garlic, paprika, crushed red pepper and a pinch of salt and pepper. Sauté another minute.

Add the fresh corn to the pot and toss to combine. Heck, sauté another minute.

Add the stock and half & half to the pot. Stir to combine. Keep on a low simmer for 15 minutes. Taste it. Need a little salt and pepper? Add a pinch or two.

If you have an immersion blender, place it in the pot and pulse it a few times until about half of the soup becomes creamy, still leaving whole kernels as well. If you don’t have an immersion blender, ladle about a cup and a half of the soup into a blender and pulse until creamy. Pour back into the pot and stir to combine.

Serve chowder with the shrimp and reserved bacon crumbles. Garnish with slivered basil/tarragon if desired.

Get in my belly: Spice Cake with Blackberry Filling and Cream Cheese Frosting

Hello Fall! 

This is a perfect ending to a crisp September day (or a fantastic beginning to one!).

The recipe was one I cut out of Bon Appetite years ago. I add 1-2 Tbs. of lemon juice to the frosting. Gives it a nice tang and balances out all that sweetness. Also - I usually pile all the frosting on top rather than frost the sides. (It's pretty ... and I'm a lazy cake decorator.)

INGREDIENTS: 

For cake
2 cups cake flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 cups (packed) golden brown sugar
3 large eggs, separated
1 cup sour cream

For filling
3 1/2-pint baskets blackberries
1/4 cup sugar

For frosting
1 1/2 8-ounce packages cream cheese, room temperature
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
5 cups powdered sugar (about 1 1/4 pounds)
2 tablespoons sour cream
1 teaspoon vanilla extract
1-2 Tbs. of lemon juice

1 1/2-pint basket blackberries

DIRECTIONS:

Make cake:
Preheat oven to 350°F. Butter and flour 9-inch-diameter springform pan with 2 3/4-inch-high sides. Sift first 7 ingredients into small bowl. Using electric mixer, beat butter in large bowl until fluffy. Add brown sugar and beat until well blended. Beat in egg yolks. Beat in flour mixture in 3 additions alternately with sour cream in 2 additions. Using clean dry beaters, beat egg whites in medium bowl until stiff but not dry; fold into batter in 2 additions. Transfer batter to prepared pan.
Bake cake until top is golden and tester inserted into center comes out clean, about 45 minutes. Cool cake 10 minutes. Cut around pan sides; release pan sides. Cool cake completely on rack.

Make filling:
Mix berries and sugar in bowl. Mash fruit coarsely with fork. Let stand 20 minutes and up to 1 hour.

Make frosting:
Beat cream cheese and butter in large bowl until fluffy. Beat in sugar, then sour cream and vanilla.
Cut cake horizontally into 3 equal layers. Place bottom layer, cut side up, on platter. Spread 1 cup frosting over. Spread half of filling (about 3/4 cup) over frosting, leaving 1/4-inch plain border at edge. Top with second cake layer and 1 cup frosting, then remaining filling. Top with third cake layer, cut side down. Spread remaining frosting over top and sides of cake. Refrigerate until frosting sets, about 1 hour. (Can be made 1 day ahead. Cover loosely; keep chilled until 1 hour before serving.) Garnish cake with 1/2 pint berries.

Live Webcast Event: Conquer Your Fears and "Live to Give"!
