Get in my belly: Paula Deen's Corn Casserole (a.k.a. cheesy fatty goodness)

It's only Wednesday - it's not too late to add this to your Thanksgiving table. This side dish is unbelievably good - I rarely make anything that starts from a box or a can - but this dish is the first must on the "What are we having for Thanksgiving dinner?" list every year.


Paula Deen’s Corn Casserole

Ingredients
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Directions

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Get in my belly: Mocha Chip Banana Muffins

I buy bananas that I know no one will eat just so I will have overripe bananas on hand to make these muffins.

I love this recipe because of the secret ingredient - espresso powder. It really sets off the chocolate and gives a depth to the muffins. It's hard to eat just one. (I got this recipe from Allrecipes.com.)

I also use a mix of semi-sweet and bittersweet chips.

If you have guests for Thanksgiving this year - these are great to have on hand.


Mocha Chocolate Chip Banana Muffins

INGREDIENTS:

1 cup butter
1 1/4 cups white sugar
1 egg
3 ripe bananas
1 tablespoon instant coffee granules (or espresso powder),
dissolved in
1 tablespoon water
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup semisweet chocolate chips (we like using Ghirardelli's® Double Chocolate Chips - which are really just bittersweet chocolate).

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).

2. Blend butter or margarine, sugar, egg, banana, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into 15 to 18 paper-lined muffin cups.

3. Bake for 25 minutes. Cool on wire racks.

Get in my Belly: Beef Stroganoff

This is one of the recipes I've been making the longest. It was given to me by Lisa, my bestie from high school. I think it was her grandma's recipe. My copy is so faded and spotted with grease, beef stock and sour cream that I can barely read it.

Beef Stroganoff

Ingredients:

1 tablespoon of flour
This photo is very yellow - sauce is actually brown.
1/2 tsp of salt
1 lb. beef sirloin cut in to 1/4 inch wide strips
2 tablespoons butter
1 cup thinly sliced mushrooms
1/2 cup chopped onion
1 glove garlic minced
2 tablespoons butter
3 tablespoons flour
1 tablespoon tomato paste
1 1/4 cup beef stock
1 cup sour cream
2 tablespoons cooking sherry

Directions:
Combine 1 tablespoon flour and the salt; dredge meat in mixture. Heat skillet then add 2 tablespoons butter.  When melted, add the sirloin strips and brown quickly, flipping meat to brown on all sides. Add mushroom slices, onion and garlic; cook 3-4 minutes or till onion is barely tender and the mushrooms have released their moisture.

Remove the meat and mushrooms from the skillet. Add 2 tablespoons butter to pan drippings; when melted, blend in 3 tablespoons flour. Add tomato paste.

Slowly pour in cold beef stock -- cook, stirring constantly, until mixture thickens. Return meat and mushrooms to skillet. Stir in sour cream and sherry. Heat through.

Serve with parsleyed noodles, wheat groats or pilaf.

Get in my Belly: Momma Rochelle's Gumbo

In honor of tonight's Southern Style Facebook Party with Tamera Alexander I made this recipe for Gumbo that I've had in my "to-make" file.

The recipe was part of Food & Wine's Heartland Thanksgiving article. It's simmering now - it smells wonderful.

This thick and spicy gumbo is incredibly satisfying. It's rich with pieces of andouille sausage and chicken breast, and best with a bowl of steaming rice and hot sauce, for serving.
(I shredded some grilled chicken and added it to the gumbo during the last hour.)


PREP TIME: 30 MIN
TOTAL TIME: 2 HRS 45 MIN

SERVINGS: 8

INGREDIENTS
1/2 cup canola oil
1/2 cup all-purpose flour
1 large onion, finely chopped
1 celery rib, finely chopped
2 green bell peppers, finely chopped
6 garlic cloves, minced
1/4 cup tomato paste
2 1/2 quarts chicken stock or low-sodium broth
1/4 cup Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
1 1/2 pounds andouille sausage or spicy kielbasa, sliced 1/2 inch thick
1/2 pound okra, thinly sliced
Salt and freshly ground pepper
8 skinless, boneless chicken breasts (about 6 ounces each), lightly pounded
2 tablespoons extra-virgin olive oil
2 scallions, thinly sliced
Steamed white rice and hot sauce, for serving

DIRECTIONS
In a large pot, combine the oil and flour and cook over moderately high heat, stirring constantly, until golden, about 5 minutes. Add the onion, celery, bell peppers and garlic and cook over moderate heat, stirring frequently, until the vegetables are tender, about 10 minutes. Stir in the tomato paste and cook for 1 minute. Add the chicken stock, Worcestershire sauce, oregano, thyme and bay leaf and bring to a simmer. Add the andouille and okra and simmer over low heat until the okra is broken down and the gumbo is thickened, about 2 hours. Season with salt and pepper. Discard the bay leaf.

Preheat a grill pan or light a grill. Brush the chicken with the olive oil and season with salt and pepper. Grill over moderate heat, turning once, until lightly charred and cooked through, about 10 minutes. Let the chicken rest for 5 minutes, then thinly slice it crosswise.

Spoon the gumbo into shallow bowls. Top with the chicken and scallions and serve with rice and hot sauce.
