Get in my belly: EASY granola (Use those pumpkin seeds!)

Wondering what to do with all those pumpkin seeds? Make granola!
Go here for an easy how-to for roasting pumpkin seeds.

Here is an easy, low-fat toss and bake recipe that I pulled from Real Simple years ago. It's very versatile - I usually throw in whatever I have on hand or need to use up. This also makes a great gift.

Makes 6 cups | Hands-On Time: 05m | Total Time: 35m

Ingredients

4 cups old-fashioned rolled oats (not quick cooking)
1 cup sliced almonds (I used walnuts, unsalted cashews & sunflower seeds)
1/2 cup shredded coconut (preferably unsweetened)
1/4 cup unsalted pepitas (hulled pumpkin seeds) or shelled sunflower seeds
1/2 cup pure maple syrup
2 tablespoons canola oil
1/2 teaspoon kosher salt
1 cup dried fruit (such as cherries, cranberries, figs, raisins, or currants)

Directions
Heat oven to 350° F. On a rimmed baking sheet, toss the oats, almonds, coconut, and pepitas with the maple syrup, oil, and salt.

Bake, tossing once, until golden and crisp, 25 to 30 minutes.

Add the dried fruit and toss to combine. Let cool.

Get in my belly: Perfect Pumpkin Seeds (Pepitas)

Now that all guts and seeds are out of your pumpkin - get those seeds roasting!

Eat them as a tasty snack or add them to salads, soups or granola. Like this recipe here.

Here's a quick how-to I found at all-recipes:


1.  Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've removed the seeds from the pumpkin, before the pulp has dried.)

2.  Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.

3.  Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes.

4.   Let cool and store in an air-tight container.

Get in my belly: Cheesy Eggs!

This is my family's favorite breakfast ... when I say I'm making "cheesy eggs" everyone says, "Yeah". We also refer to this recipe as "cheater eggs Benedict". The real name for the recipe is Creamy Poached Eggs and came from the Better Homes & Garden Cookbook I received early in my marriage. I've updated the original recipe just a bit.

We like it on thick slices of multi-grain toast or English muffins. Sometimes we add spinach, bacon or sausage.

Ingredients:

Creamy Poached Eggs 
Better Homes and Gardens New Cookbook * 1930-2000
Serving Size : 4
3/4 cup shredded cheese (cheddar or a mix of whatever you've got)
3-ounce package cream cheese
1 tablespoon chopped fresh chives
1/2 cup milk 1/8 teaspoon pepper 4 eggs 2 English muffins or bagels -- split and toasted

1. In a medium skillet, combine American cheese, cream cheese, milk, and pepper. Cook and stir over medium heat till the cheeses melt. Remove from heat.

2. Break one of the eggs into a measuring cup. Carefully slide egg into cheese mixture. Repeat with remaining eggs. Cover and cook over medium-low heat for 3 to 5 minutes, or till the whites are completely set and yolks begin to thicken but are not hard.

3. Top each muffin or bagel half with a cooked egg. Stir cheese mixture with a wire whisk; spoon over eggs.

Get in my belly: Quinoa and Cannellini Bean Soup With Andouille Sausage

At first glance this soup seemed odd to me ... several of my favorite ingredients, but I wasn't sure if they would all go together harmoniously.

Well, I'm pleased to report that they do. GREAT fall soup and super easy! Invite some friends or family over and share. (recipe courtesy of Nugget Markets.)


Ingredients


2 quarts chicken stock
3 tablespoons olive oil
1 yellow onion, chopped
3 stalks celery, sliced ¼ inch on the bias
4 garlic cloves, minced
2 large carrots, sliced into coins ¼ inch thick
2 large ripe tomatoes, diced
6 ½ ounces (½ package) "Aidell's" Cajun Andouille sausage, cut into thin slices
1 14 ounce can Cannellini beans or other type of canned bean, drained
1 cup quinoa
1 Tablespoon kosher salt
2 teaspoons cracked black pepper
1 Tablespoon cumin
1 teaspoon red pepper flakes
¼ cup flatleaf parsley, coarsely chopped

Preparation
Heat olive oil in a large stockpot on medium heat; add onion and garlic and sauté until onion becomes translucent. Add carrots and celery and continue cooking for 1 minute. Add Andouille sausage, cumin, red pepper flakes, salt and black pepper to stock pot, then add chicken stock. Bring stock to a simmer and add diced tomatoes, Cannellini beans, parsley and quinoa. Simmer soup for 10 more minutes or until quinoa grains are fully cooked and begin to burst.

Ladle into bowls and serve with rustic bread.

Get in my belly: Minny's Chocolate Pie

Seen the movie?

Then you know all about Mrs. Minnie's FAMOUS Chocolate Pie!

Well, the good folks over at Food & Wine Magazine recreated the delish food from the book in their August issue. We love the recipe for Minny's Chocolate Pie (but of course this version is sans poo!) because it's easy AND good!

Ingredients

1 packaged pie dough crust, such as Pillsbury (I make my own)
1 1/2 cups sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten

3/4 cup evaporated milk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
Whipped cream, for serving

Directions:
Preheat the oven to 350°. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.

Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.

Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream.

MAKE AHEAD The chocolate pie can be refrigerated overnight.

Super easy and delish!
